What are cookies?

A cookie is a piece of text that a Web server can store on a user's web browser. Cookies allow a website to store information on a user's machine and later retrieve it. The pieces of information are stored as name-value pairs for example, a site name and a unique user ID. Cookies can contain several name-value pairs. A name-value pair is simply a named piece of data. It is not a program, and it cannot "do" anything. A website can retrieve only the information that it has placed on your browser. It cannot retrieve information from other cookie files, nor any other information from your machine. Once the cookie is on your computer, the site "knows" that you have been there before and can then use that knowledge to tailor the experience that you have. The vast majority of websites use cookies.

What are they used for?

Cookies are used for many different functions including auto-filling forms, counting visitors, personalising content, targeting advertising, recording user preferences and for authentication and security.
